Columbia College-Fort Worth MBA students help restaurant increase sales

Last year, Columbia College-Fort Worth MBA students from Dr. Alicia Lupinacci’s Business 595 course tackled a real world strategic management project: improving sales for Rivas Mexican Restaurant in River Oaks, Texas.
The restaurant, established in 1976, serves a variety of Mexican dishes prepared fresh daily in addition to offering catering services and private parties.
The students, Gina Smith, Shawanala Williamson-Butler, Frances Smith, Chris Beniak and Phillilp Ughanze, analyzed the restaurant and offered suggestions. Based on their analysis, owner Juan Rivas implemented a number of innovations, including purchasing a modern cash register that can print orders to the kitchen and bar, process credit cards and run reports; obtained a bar license; created an inviting website with full menu (; and placed fans in the ceilings.
The campus reports that Rivas’ sales have increased significantly.
